Turkey Burger with Apple, Caramelized Onion, and Goat Cheese

I thought I’d show you one of my favorite salad combinations. This is what I dined on at lunch today: Baby romaine, black beans, avocado, corn, mushrooms, tomato, sprouts, and red bell pepper. Alongside the salad were two kissing clementines.


And a few hours later, I munched on half of the biggest, ripest grapefruit and this english muffin slathered with almond butter and studded with cranberries:

And now I’m on my way to dinner and to see “Shutter Island” with my family. I’m thrilled we’ll be having pizza and a beautiful, rich chocolate cake with vanilla buttercream from one of my favorite local bakeries. Wonderful.
But since I want to provide you with recipes that are more complicated than salad, here’s a new one. I made these this week and fell in love. The tart Granny Smith apple in the turkey keeps the burger moist and pairs perfectly with the sweet caramelized onions. The goat cheese on top is a tangy, creamy complement. So so good. I know I’m overloading you with turkey. But this is a perfect example of being able to use up one ingredient several ways. Turkey meatballs last night, turkey burgers tonight.
Turkey Burger with Apple, Caramelized Onion, and Goat Cheese
(makes 1 burger)
• 4 oz raw ground turkey breast (93% lean)
• 2 TBSP finely grated green apple
• ½ tsp poultry seasoning
• Pinch salt, pepper
• 2 TBSP crumbled goat cheese
• 1/3 cup sliced onion
• 1 tsp olive oil
• ½ tsp sugar
Preheat oven to 350°.
In a medium bowl, combine ground turkey, apple, poultry seasoning, salt, and pepper.

Mix well with your hands and form into a patty. Place onto a small baking dish sprayed with nonstick cooking spray.

Bake 15 minutes.
While burger bakes, make the caramelized onions. Heat oil in a small skillet over medium heat. Add onions and sugar and sauté, stirring frequently, until softened and deep golden brown (about 10-15 minutes).



Now, assemble the masterpiece. Top your burger with the caramelized onions and then the goat cheese. Place under the broiler for about 1 minute so that the cheese begins to ooze and melt. Serve burger on a soft bun with your choice of condiments.
Yummmm.
