Quesadilla Salad

Take that, Chili’s!

Has anyone ever had the Quesadilla Explosion Salad at Chili’s? Well I have, and for the life of me I can’t figure out how on Earth Chili’s could make a salad 1400 calories. Sure, if it were studded with fine dark chocolate truffles and dressed in vanilla buttercream I’d say, “Hey, make it a double!” But for a quesadilla on a bed of greens?
The version I prepared for lunch involves a black bean and pepper jack cheese quesadilla, baby romaine, sliced yellow bell peppers, mushrooms, tomatoes, avocado, and black olives. I dressed the salad in salsa, hot sauce, and a dollop of sour cream. It was so satisfying. The best part about having the quesadilla triangles in the salad is the scoopability. I loved topping each bite with lettuce, peppers, and avocado. And instead of eating the gooey, cheese-filled quesadilla in 46 seconds flat, I was able to savor it slowly. Overall a fantastic and fun meal!
