Meatloaf Burgers and Fries

I would marry meatloaf if it would have me. I just love the sweet, rich flavor of the beefy bready log. Turning it into burgers is one of my favorite things to do. I use my classic meatloaf recipe and instead of forming it into a loaf, I shape the mix into patties and bake them individually. I only wish I had a grill…

I always doctor up burgers in one way or another- Exhibit A: Thanksgiving Turkey Burgers, Exhibit B: Turkey Burgers with Apple, Caramelized Onion, and Goat cheese,  or Exhibit C: my Buffalo Turkey Sliders. Using lean meats to make burgers can be a recipe for dryness, so adding other wet ingredients to the meat makes the patties moist, tender, and bursting with flavor. And by adding fresh whole wheat bread crumbs to the mix, I’m bulking up the beef with whole grain goodness. These meatloaf burgers are deliciously juicy and perfectly seasoned.

I topped my meatloaf burger with Laughing Cow French Onion cheese, lettuce, tomato, ketchup, mustard, and a divine smear of light mayonnaise. Give the Laughing Cow cheese a try on burgers and sandwiches- it’s unbelievable how creamy and full flavored it is for such a light little wedge!

And on the side, some perfectly crisped oven baked french fries. The trick to getting them evenly crispy is to pour the oil into your hands and then rub each fry shape with the oil, making sure to coat all sides. Then sprinkle them with salt and garlic powder and bake at a high temperature. The best.

The How-To:

Meatloaf Burgers: (makes 4 big patties)

Ingredients:

1 lb lean ground beef (I use either 93% lean or ground bison)
½ cup fresh bread crumbs (I finely grind one slice of whatever bread I have in the house in my food processor)
2 TBSP grated Parmesan cheese
1 TBSP Italian seasoning (just a blend of marjoram, thyme, rosemary, sage, oregano, and basil)
½ tsp ground black pepper
¼ tsp salt
3 TBSP ketchup
1 TBSP Dijon mustard
2 TBSP Worcestershire sauce

In a small bowl, combine dry ingredients: the fresh bread crumbs, Italian seasoning, salt, pepper, and parmesan cheese.
In another small bowl, combine the wet ingredients: the ketchup, Dijon mustard, and Worcestershire sauce.

Now pour dry ingredients and wet ingredients into the large bowl with the ground beef.

Mix with your hands until well combined. Be careful not to overwork the meat, or it may become tough.

Form into 4 patties and place on a baking sheet. Bake for 15 minutes at 400°. I decided to cook only three of the burgers and freeze one uncooked patty for a rainy day (code word for lazy day).

And here is how I make my extra tasty, crispy baked french fries:

Cut a large russet potato into equal sized fry shapes. Toss with a tsp or two of olive oil and a sprinkling of salt and garlic powder. (Pour the oil into your palms and rub each fry shape with oily fingers, coating evenly)

Bake for 20 minutes at 425°, flipping halfway.

    Ive only ever had meatloaf once in my life – my dad doesnt like it so my mom never made it – he must have been out of town when she made it for us.

    Oh boy oh boy! I saw the title of your post and my eyes just lit up! I’ve never heard of making burgers out of meatloaf – very creative :) I know Peter would love this recipe because he’s a huge meatloaf fan. I like how you put whole wheat bread crumbs in there. Healthy and delicious! :)

  • I L-O-V-E this idea! I don’t know why meatloaf gets such a bad rap, done right it is amazing, moist, and flavorful! Though I have never made a successful meatloaf, these burgers will be perfect for the summer, and I will definitely be attempting them! I agree with you, I love to jazz up burgers, sweet and savory, exotic and good home cooking like these babies :) Great job!

  • I can’t wait to try meatloaf burgers.I love meatloaf but I don’t make it too often.I also would like to try pot roast.And then there’s a pumpkin spice cake with chocolate frosting and whipped cream ghosts on top.We are having a Halloween party for the kids and a big dinner before that.The cake is just regular yellow cake with pumpkin,nutmeg,and a dash of cinnamon to give it a slight kick then just add your choco frosting.Trying to find sugar free recipe for these food items,being there are several diabetics in the family.I can’t wait to make my ghosties on my cake!
