Feature: Homecooked Em

When I think of Em, of Homecooked Em, the word that comes to mind is lovely. And kind. Reading her blog is a warm and comforting experience. I get the sense that she cares about the things she publishes as much as she cares for her readers. The kind of person who you feel has known you for years even though you’ve just met. One of those lifelong friends.

She makes me smile, she inspires me, and encourages me always. And the best part? She’s having a baby. Another human being who will get the best parts of Em and all the love in the world.

Read on to find out Em’s take on food, jobs, and the best advice she’s ever received. Spoiler: the cookie-wich she describes toward the end may be the best thing I’ve read about all year. And I read a lot.

What profession, other than your own, would you like to attempt?

I’ve always wanted to be a hair stylist!  I just picture how it is in the movie Steel Magnolias and how fun it would be to chat with all my clients and make them feel pretty!!

What did you want to be when you grew up?

A speech therapist and work with kids one-on-one in a private practice.  Unfortunately, it would take me going back to school full-time for a few years in order to accomplish that goal and it’s just not financially possible right now.  Maybe one day!!

Which popular sitcom character are you closest to?

I don’t really watch much TV, but I think my personality is pretty similar to Pam’s from The Office.  We both struggle with being more assertive and speaking up more.  She’s lucky to have a great guy and so am I.  And I’d like to think I have a good sense of humor like she does.

If told that this is your last day on earth, how would you spend it?

I’d have a big cookout at my house and invite all of my closest family and friends to come over and party the day away with me.  I can’t imagine spending it any other way than laughing and eating with the people I love the most.

What is the best advice you’ve ever received?

When I was struggling to conceive, I got tons of advice and support, but I think the best advice I got was from my grandma.  She didn’t tell me anything specific, but she just told me to read the book of Psalms in the bible.  She said it always brought her hope, encouragement, and faith in times of need.  After sitting down with my bible that night, I knew exactly what she meant.  I felt such comfort, happiness, and peace.

If you were given $5,000 to spend at any one store, which store would you choose?

Target.  They have it all!!  I could probably spend it all in one trip.  And they have lots of baby stuff.  Love it!!

If you could choose one of your personality traits to pass on to your children, what would it be?

Compassion for others.

What would you attempt if you knew you could not fail?

Start my own business.  Not sure what kind of business I’d have exactly, but probably something involving kids like a preschool.  Or maybe a hair salon?!

What are your top three favorite foods?

Currently: red grapes, pimento cheese sandwiches, birthday cake

If you had to only eat meals from one fast food chain restaurant for the rest of your life, which would you choose?

Chik-Fil-A!  I love their waffle fries, sandwiches, nuggets, chick-fil-a biscuits, salads, ice dreams, lemonade, wraps, soup… I love the entire menu!!  I’m getting hungry…

If you could dine with any living famous person, who would it be?

Sandra Bullock, love her!  She has such class and a fun sense of humor.  I think we’d end up laughing the entire time!

What is your ultimate breakfast?

sweet: blueberry pancakes with butter and maple syrup, savory: biscuits and gravy

Your ultimate lunch?

a veggie and cheese panini with loaded baked potato soup

Your ultimate dinner?

A Thanksgiving meal: turkey, stuffing, gravy, roasted vegetables, cranberry sauce, mashed potatoes, biscuits, mac and cheese, green beans, broccoli salad, and sweet potato souffle!  Told you I was getting hungry!!

Your ultimate dessert?

2 chocolate chip cookies with butter cream icing in the middle and then dipped into milk chocolate!!

When did you start blogging?

May 2009

What do you like the least about blogging?

When other people unnecessarily brag.  Don’t get me wrong, I love when my friends are proud of themselves for accomplishing a goal or are feeling happy because of something wonderful that has happened to them.  There is absolutely nothing wrong with that, in fact I think people should be happy and proud of themselves.  It’s inspiring!  But when someone constantly toots their horn every other sentence and every other picture is of them or their significant other, I get a bit annoyed.  But ya know it’s their blog, so there’s nothing wrong with that, I just choose to no longer read it.

What is your favorite recipe? (Link to it!)

I don’t really invent recipes or even cook much since my husband does most of the cooking for us, but I do know how to make some really good homemade applesauce!  http://homecookedem.wordpress.com/2009/09/25/johnny-appleseed-day/

Which post of yours is your favorite? (Link to it!)

I picked this one because it was when my relationship with food and my body image started improving.  It’s only gotten better since then!  http://homecookedem.wordpress.com/2010/01/23/the-scale-got-me-thinking/
