Salsa Fresca
Ingredients:
- 4 medium-sized ripe tomatoes, very finely diced
- 1/2 cup red onion, minced
- 3 cloves garlic, minced
- 1 jalapeno, seeded and minced
- 2 tablespoons minced green chiles (from a can)
- 1 teaspoon sugar
- 3 tablespoons fresh cilantro, minced
- Juice of 1 lime
- 1/2 teaspoon salt
Directions:
- Combine all ingredients in a medium bowl; mix well. Cover and refrigerate until ready to serve, at least 2 hours.
(makes 3 cups)

Mmmm… I have an abundance of tomatoes coming in and I thought just the other day that I need to make salsa… or gazpacho!
I know what I’m doing as soon as the semester ends next week and I catch a few moments to breathe (and cook)!

Yummmm! Salsa is my go-to condiment for almost everything and I’ve been experimenting with different mixes lately. Yours sounds so yummy!!
Speaking of fresca/o, have you ever made queso fresco? I tried it out a few months ago and it had, like, no flavor. This would obviously not be the case with salsa (YUM), but just curious as to your own south-of-the-border kitchen experiences.
It looks so fresh and tasty!! Can’t wait until my tomatoes are finally ripe so I can make my own salsa too! I’m definitely saving this recipe for when the time comes

anything with tomatoes sounds perfect right about now. tomatoes are seasonal in NJ now and they just don’t get better!
