Salsa Fresca

Ingredients:

  • 4 medium-sized ripe tomatoes, very finely diced
  • 1/2  cup red onion, minced
  • 3 cloves garlic, minced
  • 1 jalapeno, seeded and minced
  • 2 tablespoons minced green chiles (from a can)
  • 1 teaspoon sugar
  • 3 tablespoons fresh cilantro, minced
  • Juice of 1 lime
  • 1/2 teaspoon salt

Directions:

  1. Combine all ingredients in a medium bowl; mix well. Cover and refrigerate until ready to serve, at least 2 hours.

(makes 3 cups)

    Mmmm… I have an abundance of tomatoes coming in and I thought just the other day that I need to make salsa… or gazpacho!

    Speaking of fresca/o, have you ever made queso fresco? I tried it out a few months ago and it had, like, no flavor. This would obviously not be the case with salsa (YUM), but just curious as to your own south-of-the-border kitchen experiences.
