Easter Chick Cupcakes: A Step by Step Guide

What you’ll need:

Vanilla cupcakes, 1 to 2 dozen
Vanilla frosting, enough to frost the amount of cupcakes you’ve baked
Sweetened flaked coconut, about 2 cups
Orange gummy candy
Yellow food coloring
Chocolate sprinkles

Put the vanilla frosting in a medium bowl. Add 5 to 7 drops of yellow food coloring and stir until fully uniform in color. For a brighter, more intense yellow, add a few more drops and stir until you achieve your desired color.

Put 2 cups of coconut in a medium bowl and add 3 drops of yellow food coloring along with 1/2 teaspoon cold water. Stir and toss the coconut for about 1 full minute, until all of the flakes have turned yellow. If you want to achieve a brighter yellow, add a few more droplets of food coloring. Oppositely, if you find that the flakes are too intense in color, add more plain coconut to the bowl along with 1/2 teaspoon of cold water and stir until all of the flakes are evenly yellow.

Make the beaks: Cut the orange segments in half length-wise, and then cut each crescent into small triangles. Use your fingers to shape the gummy candy if necessary.

Assemble: Start by frosting each cupcake evenly with 2 to 3 tablespoons of the yellow frosting.

Next, add the coconut. To do this, either use your hands and pile the coconut onto the frosting, pressing gently so that the flakes adhere, or hold the cupcakes upside down and dip the frosting into the coconut.

Attach the eyes and beaks. Either press the candies onto the frosting/coconut as they are or use a toothpick and apply a dab of frosting to the backs of the beaks and the sprinkles before adhering to the cupcake.

Serve. Enjoy!

Awesome! I almost sent u a pic of some bunny cupcakes I bought at the Amish bakery that used sprinkles like the ones you used in a bar. Been busy w mom so just caught up on posts…re: smoothies I love em w protein powder or Greek yogurt for lunch or a snack. After my magic bullet and blender didn’t get it I finally bought a ninja system which I love http://www.ninjakitchen.com/mega-kitchen-system/ and re the book :) love is patient cant wait!
